Cheddar is one of the most consumed cheeses in the world, and Canada is no exception to this craze.
Although this firm cheese originated in the small town of Cheddar in England, Canada is one of the largest producers of cheddar in the world. Its various products are winners of several international awards.
There is cheddar sold on the market at various stages of maturation. Strong cheddar contains less moisture, therefore has a crumblier texture than its counterparts.
Aged cheddar has been matured according to the purest tradition.
FLAVOURS: The aroma is earthy and slightly salty. The flavour varies according to the producer, but we always find the sweetness and richness of the milk, an acidity sometimes mixed with notes of hazelnut, with the effect of an explosion of flavours and a persistent spiciness approaching the taste of the onion.
HOW TO ENJOY: In sandwiches, to fill a small craving, generous pieces on a platter, topped with apples, with seasoned nuts and crispy bread. It is also excellent in sauces, melted on baked potatoes or grated on vegetable dishes and then grilled.
Accompany it with a Merlot or Pinot Noir.
