Aged for 2 months, this semi-soft washed rind cheese is made from pasteurized cow's milk. This cheese has and orange-brown rind and a supple paste. You will appreciate its vegetable ash line that separates the cheese in half.
Sorcier de Missisquoi refers to a shaman who paints his face and speaks incantations; the connections with the cheese is that it is painted with a line of ash in its center.
