The historical production of Soumaintrain is in the village of Soumaintrain in the Burgundy region. The first trace of this cheese is date back in the 12th century. From the well-known cheesemaker Berthaut, the Soumaintrain is a wash rind cheese made from pasteurised cow's milk. It has a pale yellow paste and has a little bit of humidity to his texture. It is aged with a specific technique that consists of washing the rind regularly with brine. PGI is a protected stamp that guaranties the product is made in its geographical origin. Soumaintrain has this protection since 2016. FLAVOR: Soumaintrain develops intense aromas with a point of bitterness over time. HOW TO ENJOY: Serve it before the meal with a fresh salad.
