The Delin cheese dairy is in Gilly-lès-Cîteaux, in the heart of Côte de Nuits. They've been making cheeses typical of the Bourgogne-Franche-Comté region for 50 years.
This very onctuous, fat and delicious cheese was created when milk fat was considered nutricious, tasty and beneficial. This cheese would be the center of high gastronomy meals and was described as the "foie gras of cheese".
It's a triple cream, a soft cheese registered since January 2017 in the register of Protected Geographical Indications (GPI), European sign of guaranteed quality and origin.
Flavour : consumed fresh (unripened), the smoothness and creaminess dominate, with notes of cream and a tiny bit of acidity and freshness.
How to enjoy : let at room temperature for a while then gently spread on a piece of crispy baguette. Serve it with small fruits and nuts. A light fruity wine will go very well along with the Brillat Frais, as well as a Champagne of character.
