The Delin cheese dairy is in Gilly-lès-Cîteaux, in the heart of Côte de Nuits. They've been making cheeses typical of the Bourgogne-Franche-Comté region for 50 years. Launched at the Salon International de l'Agriculture 2020, it was created in partnership with the Département de la Côte d'Or. Made with milk originating exclusively from that region, it's a cheese with a rind that is both blooming and washed with an orange color. Its paste is creamy with a firmer heart when its younger and getting more and more creamy in the center as it ripens. FLAVOUR : It has the typical odor of washed rinds but it has a delicate taste with a melting texture. HOW TO ENJOY : Serve with a baguette, jam or nutty quince paste. It will go very well with a pinot noir from Bourgogne like a Savigny-lès-Beaune.
