Bouyguette is a raw, whole goat's milk, soft cheese with a natural rind, made by Fromagerie Du Pic in the Tarn department.
Bouyguette is an elongated cheese, known as a "navette", which is hand-molded in a cloth. After the curd has drained for at least 24 hours, the cheese retains an impression of the folds of cloth on its surface. Bouyguette is adorned with a sprig of rosemary typical of the garrigues, giving it a very pleasant aroma.
Its rind is thin and ivory colored. It is covered with a discreet white down.
TASTE: Its fresh, white paste is both fine and dense. It is a smooth, creamy cheese that melts in the mouth. It gives off slightly goaty lactic and herbaceous aromas of thyme and rosemary.
