La Mothe co-op in Nouvelle Aquitaine, maker of the Délice des 2 sèvres, was founded all the way back in 1897. Specializing mainly in goat cheeses, the facility was later bought out by Poitou Chevre in 1996, a family run business which focuses mainly on the traditional production of the likes of Chabichou du Poitou and Mothais sur feuille.
From the Poitou-Charentes region the Délice des 2 Sèvres is an ash covered, bloomy rind, soft cheese made from pasteurized goat's milk. Its oblong shape catches the eye and it is one of the specialties of Poitou Chevre. Under its thin vegetal ash covered rind is a slightly runny paste with a chalky heart.
Flavours: Slightly caprine but not barnyard, delicate and lactic
Ways to enjoy: Goes well with a cranberry bread loaf and a fruity red or white wine from Touraine.
