The Fromagerie Le Pic, located in Penne in the Occitanie region since 1980, continues the great tradition of goat cheese making in Southwestern France. Made from whole raw goat’s milk, Le Pic Cabécou reflect the region’s artisanal expertise and showcase the full aromatic richness of goat’s milk. Presented in a convenient 3 x 40 g format, Le Pic Cabécou are small lactic goat cheeses made from whole raw goat’s milk. Carefully moulded, they feature a fine natural rind whose color evolves from chalky white to creamy blond as they mature. Their paste is tender, smooth, and delicately creamy, offering the characteristic texture of the finest Cabécou from Southwestern France. FLAVOR: On the palate, Cabécou reveal fresh, milky aromas typical of goat’s milk. When young, they offer a mild and delicate flavor. As they mature, their taste becomes more intense and develops deeper notes while maintaining excellent balance. Their authentic character appeals equally to lovers of mild goat cheese and to connoisseurs seeking more pronounced flavors. HOW TO ENJOY IT: To fully appreciate their qualities, they are best served at room temperature. They are delicious on a slice of country bread, accompanied by a drizzle of honey or a handful of walnuts. They also work beautifully in a gourmet salad or lightly melted over toast. For wine pairings, they go perfectly with a crisp, dry white wine such as Sauvignon Blanc or a white wine from Southwestern France, both of which enhance their delicacy and freshness.
