It is a family business for three generations, using traditional production methods.To ensure high-quality cheese, they work directly with 24 regional dairy farmers located within a 50-kilometer radius. They have a site entirely dedicated to aging: a drying room, underground cellars, and manual turning by a cellar master. FLAVOR: Its taste is creamy, rich, and buttery.When young, it is mild, with aromas of milk, hazelnuts, and mushrooms. As it ages, its flavor becomes more pronounced, with earthy notes of a cool cellar and wild mushrooms.Its creamy texture becomes more runny and its flavor more pronounced with aging.
