Being a family business for now over a century, the Vaubernier are now 3rd generation cheese makers. They have been using the same traditional recipe since 1912, staying true to the quality of their products and the care for their terroir. The Brie Lancelot Bio is made from organic whole milk, collected from producers in a radius of no more than 40km from the Fromagerie and all the milk is put into production in no more than 48 hours after being harvested. The herds are raised following the very strict guidelines encompassing organic farming. The cows are fed with organic farm grown feed and graze freely as much as the weather permits, between 5 to 7 months a year. The Brie Lancelot Bio is a soft, bloomy rind cheese which ages and matures gracefully with time both in flavour and texture. It goes from mild and slightly firm with a slight chalkiness to rich and creamy with deeper aromas. Flavour: Intensifies with age. Young it is mild and milk forward, nutty with buttery aromas. As it ages more earthy flavours come forward and a slightly deeper mushroom taste blooms and envelops the more lactic aromas. How to enjoy: Ideally served at room temperature with fresh bread accompanied by a crisp blonde beer or a nice dry cider to highlight the nutty and earthy flavours or with fresh fruit to bring the salty and buttery aromas forward.
