The Moosbrugger cheese dairy, located in Austria, is recognized for the great care it takes throughout the maturing of its cheeses. Matured for around 6 months in cool cellars, a second period of refining is necessary to add blend of alpine herbs and Arolla pine to the rind and to bring aromas into the paste.
Its tender to firm pale-yellow paste accentuates the colored rind!
