It is on the edge of Switzerland, in the town of Granges-Narboz in the Bourgogne-Franche-Comté region, that Marcel Petite ages its exceptional Comté cheeses. For several generations, this iconic company has championed the expertise of Jura cheese dairies through a philosophy of slow maturation, allowing each wheel to fully express its potential. Comté Symphonie is made from raw milk, produced by Montbéliarde cows raised according to Comté PDO specifications, in the rich and flower-filled pastures of the Jura Mountains. Comté Symphonie is a cooked pressed cheese that matures in the famous Fort Saint-Antoine cellars, a unique location whose natural conditions encourage the development of remarkable aromatic complexity. Its pale yellow paste has a supple, mellow, and melt-in-the-mouth texture while retaining a pleasing density. Each wheel is carefully selected to reach its optimal level of maturity and finesse. FLAVOR: Comté Symphonie reveals a complex and elegant aromatic profile. Delicate notes of hazelnut, caramelized onion, butter, and cooked milk are complemented by a long, pleasant finish. Its balance between intensity and finesse makes it a refined cheese that appeals to both enthusiasts and connoisseurs. HOW TO ENJOY IT: To fully appreciate its richness, it is best served at room temperature. On a cheese board, it showcases all of its subtlety and can be enjoyed alongside other Comtés to appreciate its unique characteristics. Because of its excellent melting qualities, it is also perfect in gratins, fondues, sauces, and gourmet recipes. For wine pairings, it matches beautifully with Jura wines, particularly Chardonnay, Savagnin, or Chenin Blanc. A true symphony of aromas, this selection from Marcel Petite perfectly illustrates the art of Jura cheese aging, where time, terroir, and craftsmanship come together to create a Comté of remarkable elegance.
