The cheese's visual appearance greatly affects its flavours and odours. Mucor, a grey or brown coloured mold that develops naturally on the cheeses in the Savoyardes cellars, allows the cheeses to develop their unique flavours. Its white to pale yellow paste is sticky and smells of the cellars where it is ripened. FLAVOUR: The paste is soft and has a slightly nutty flavour. It has a rustic and herbaceous aroma. HOW TO SAVOUR: This cheese is excellent melted, on a cheeseboard, in slices with apples or in the evening, Tomme de Savoie is always a good idea. Try it with light and fruity Savoie wines.
