This is one of many cheeses in which alcohol is used during the ripening process. With this particular cheese, it is Muscadet that is used (a fairly dry white wine that is AOC protected). This cheese has a supple and unctuous texture and is shaped like a disc and is orange in colour. The paste is very white and has no openings. FLAVOUR : The taste of this cheese is quite powerful thanks to its washed rind but it is perfectly balanced by its caprine aromas. HOW TO SAVOUR: It is an interesting cheese to try in a raclette, accompanied with a glass of Muscadet.
