The RIZET family has owned and operated a farm located in Montot since the 1900's. The Oudrache river casually winds among the beautiful green prairies. These prairies produce quality grass which the goat herd happily feeds on. The Blanc Bleu du Rizet possesses its name because of the magnificent white and blue duvet that covers it during the ageing process. This cheese is made from raw goat's milk coming from the same goat herd made up of 200 goats, does and 7 billies. FLAVOUR: The interior is very dense and is an immaculate white. Its flavour is light and grassy unveiling marked caprine notes. HOW TO SAVOUR: This cheese is so enjoyable and delicious that is almost a shame to eat it any way other than plain, at room temperature.
