This artisanal whole milk blue cheese is made in the mountains. The mountain's lush green slopes grow wild flowers and thick grass which give the ewe's milk its complexity, its finesse and its texture. The Bleu de Basques is ripened for a minimum of 3 months. This gives the paste its soft, lightly blue-veined interior. It has a naturally dry grey rind and its paste is cream-coloured and marbled with grey-blue Penicillium. FLAVOUR: This blue with a pronounced flavour presents a nice balance between the slightly bitter flavours of the penicillium roqueforti and the notes of lanolin from the ewe's milk. HOW TO SAVOUR : Serve it for dessert accompanied with scones or dried figs.
