Made in West Dorset on England's south west coast, Jason Barber, inventor of Pure Milk Vodka, is a dairy farmer with his own 250 strong grass grazed herd, and a member of the world's oldest cheese making families in the West Country for generations, with over 180 years of farming history. Milk from grass grazed cows is the best for cheese making because it is high protein, meaning it has more flavor. To produce Black Cow Vintage Cheddar, all of the milk is used with no waste. The whey is used for the vodka and the curds for the cheese. It possesses a smooth, creamy texture and occasionally crystal crunch which is unusual for this type of cheese. This texture is achieved by the use of a beautiful black wax that keeps the humidity of the cheese inside. FLAVOR: It has a lactic, sweet and nutty flavor with a long finish. It is also slightly acidic. HOW TO ENJOY: Enjoy it at room temperature and it pairs well with red wines to match its long finish. Choose a medium bodied wine like Merlot.
