This 14-month-old cheddar is made with pasteurized cow's milk from a herd of Somerset cows. This flawless product is handmade and made from a 70-year-old recipe. Its texture is firm and melts in the mouth with small grains of salt through its pale-yellow colored paste. The secret of its pleasant texture comes from the moisture retained from the wax throughout the maturing process.
