The Vieux Brugge is a traditional cheese; it has existed for 20 years as the dean of all Bruges cheeses. It is named Vieux Brugges (Old Brugges) because its ageing process lasts 30 months. Over time, it acquires a generous flavour, while remaining low in salt content.
Brugge products are recognisable thanks to the lace design that is present on all of their labels. Initially associated with the Vieux Brugge only, the design is now on all of their new packaging, which makes all of their cheeses easily identifiable
FLAVOUR : Just like the Prestige de Brugge, this cheese is produced like an old Gouda. However, its texture is more friable because of its longer ageing process. Its flavour lingers on the palate and has a slight roasted aroma.
HOW TO ENJOY : It is delicious on a slice of bread or with an aperitif. It can also be used to enhance many dishes.
