Millefoglie Marzemino is a cheese from the Piedmont region in Italy. Produced according to traditional Italian methods, it is made from thermized cow's milk. It is inspired from the recipe of the Montasio and it is also called the Drunken Cow.
The wheel is first pierced and then immersed in Marzemino wine. This cheese also undergoes a particular treatment to induce a flaky stratification which allows the wine to penetrate the paste of the cheese.
Aged between 7 and 12 month, its name comes from its ''thousand'' layers (mille in Italian) and the Marzemino wine. It has a crumbly paste with beautiful wine veins.
FLAVOUR : With intense red wine aromas, it has piquancy notes followed by a sweet taste who perfectly balanced the flavour.
HOW TO ENJOY : Perfect on a cheeseboard, it pairs well with a Marzemino. It can also be delicious crumbled on a risotto.
