This cheese is completely covered with dried rosemary. Its paste is immaculate white. Five months of refining are necessary to obtain the firm texture, but so creamy on the palate, that it deserves to be discovered.
FLAVORS: The taste of spices is well imbued in this cheese and mixed with the slightly sweet notes from sheep's milk, this creates an extremely successful amalgam.
HOW TO TASTE IT: Its maturating allows it to be used as a flavor enhancer by being grated in various dishes. However, aromatic cheeses are also interesting to be added on a platter and allow to multiply the flavors and diversify the experience.
It pairs well with a Pinot Noir or a Pinot Grigio.
