The dry pastures of northern Castilla contribute to Zamorano's complex character. Shepherding and moving herds between summer and winter pasture have a strong heritage here, and the dramatic landscape offers a great variety of vegetation and climate.
FLAVOUR : The quality and character of the ewe's milk allow the cheese to be matured for long periods. It develops an intense, slightly tart, nutty complexity with a distinct sheepy aroma.
HOW TO SAVOUR : Serve it alone at the end of a meal, or with quince paste and the local wine Toro.
