LactAçores was created in 2004 to protect and promote dairy products from the archipelago of Azores focusing only on the products made by co-ops from the islands. The Isle of São Jorge is the only real Portuguese cow's milk cheese from the island of Saint George in the Azores. Receiving its DOP in 1986, the Sao Jorge descends from Flemish settlers who came to live on the island in the 15th century, which makes it a very close relative to some Dutch cheeses. The Azoreans consume it preferably young and relatively sweet and bitter. The continental amateurs preserve it a few months, sometimes up to a year and enjoy it grated. São Jorge AOP is matured for 7 months and has a hard, crumbly texture. After 12 months of ripening, its texture becomes similar to Parmesan. Its flavor is spicy, with a slight tingle and its taste is clean and bold. Young, pairs well with similarly strong and bold charcuteries. Aged, it is often grated to add zing and character to a dish. Accompanied by an intense wine, you will have a balance of flavors.
