Fromagerie Rouzaire is a family-owned business that produces a range of artisanal bloomy rind cheeses in the Seine-et-Marne region, near Paris. It is a third-generation family business that uses traditional production methods.To ensure high-quality cheese, they work directly with 24 regional dairy farmers located within a 50-kilometer radius. They have a site entirely dedicated to aging: a drying room, underground cellars, and manual turning by a cellar master. After two weeks of aging in underground cellars, a Brie Rouzaire is cut in half horizontally and coated with a mixture of mascarpone, cream, and Meaux mustard before being aged for an additional two weeks. Less pungent than Dijon mustard, Meaux mustard adds a rich, balanced, and refined flavor. FLAVOR: Its taste is creamy, rich, and buttery, with notes of milk, hazelnuts, and mushrooms. Meaux mustard brings its crunchy seeds and its mild, slightly spicy, and nutty flavor. Its creamy texture becomes smoother and its flavor more pronounced with aging. HOW TO ENJOY: It is best enjoyed with fruit or nuts and crusty country bread. It pairs well with a wheat beer or a dry white wine such as a Chablis.
