The Isigny Sainte-Mère cooperative was born of the merger of the Isigny-sur-Mer and Sainte-Mère-Église cooperatives, founded in the early 20th century. Cows graze in the Cotentin and Bessin marshes for a minimum of seven months a year, generally from April to November. The generous grass of the marshy soils enables them to produce milk of unique quality, rich in mineral salts and oligo-elements.Their dairy products are renowned the world over: Isigny AOP butter and cream, camembert, pont-l'évêque, mimolette, fromage frais... They owe their quality to Normandy's know-how in butter-making, cream-making and cheese-making, combined with an exceptional terroir between land and sea.
Brie d'Isigny milk is collected within a 50km radius of the Cooperative in Normandy. It is then carefully elaborated and aged in our cellars.
FLAVORS: Its texture is meltingly soft. It has a velvety white rind and a soft, creamy center, with a slightly salty taste.
HOW TO TASTE IT: Place a slice on a slate, accompanied by fresh fruit and crackers. Its mildness makes it an excellent brunch cheese with both flavored breads and bagels. Pairs well with a Beaujolais-style red wine or a lager beer.
