Tomme à l'eau de vie de Mirabelle is a cheese from Lorraine made from pasteurized cow's milk. It is aged for a minimum of 3 months, during which time the cheeses are regularly brushed with Mirabelle plum brandy. Mirabelle brandy is a strong alcohol made from small yellow-orange plums.
It's a round cheese, with a slightly orange rind. It has a supple texture and a melt-in-the-mouth texture.
TASTE: Fruity and buttery, with an intense bitterness on the finish due to regular washes with mirabelle plum brandy.
HOW TO TASTE IT: Ideal on the go or in salads. But also warm, in raclette or au gratin. Pair with a white Toul wine or a summer Darjeeling tea.
