The Tomme de Savoie IGP Pochat from Pochat & Fils (established 1919) is a unique iteration of the world famous cheese. Made from whole raw cow's milk in Haute-Savoie region, it is recognizable by its brownish rind with a slight greyish hue. This difference is due to the fact that microbial diversity is encouraged by Pochat and is even deemed a sign of a quality. Some bright yellow spots might appear, fear not, it is a sign that the Tomme has reached its peak age!
Flavour: Lightly salty, milk forward, it has a mild delicate flavour with small openings throughout. Light nuttiness with a slight tang.
Ways to enjoy: At room temperature, great choice for a cheese platter or as an appetizer with a dry white wine. Tomme de Savoie IGP Pochat is versatile and can be just as good for a gratin or a sandwich.
