This cheese is covered with dried rosemary. Its paste is of the immaculate whiteness typical of most goat's milk cheeses. Five months of refining are necessary to obtain the firm texture, but so creamy on the palate, that this cheese deserves to be discovered.
FLAVORS: The taste of dried spices is well marked in the cheese and offers an exceptional balance between the goat aromas and the herbaceous notes.
HOW TO TASTE IT: Its maturing allows it to be used as a flavor enhancer by being grated in various dishes. However, aromatic cheeses are also interesting to be added on a platter and allow to multiply the flavors and diversify the experience.
It pairs well with a Pinot Noir or a Pinot Grigio.
