New Quebec cheese, Le Bouclier.
Made from pasteurized goat's milk, with a line of ash in the middle. This process was once used to protect the curd between 2 milkings. The ash is now decorative and makes the cheese look attractive on a cheeseboard with its marble-like look.
FLAVOURS : On the mouth there is a sweet flavour followed by a goaty finish.
HOW TO ENJOY : Gorgeous on a cheeseboard. It also reveals all its flavours once melted, for example in a quiche or raclette.
Pair it with a dry white wine such as Chablis.
