Made exclusively from fresh goat's milk collected in Poitou Charentes, the Crottin d'Antan is moulded by hand by ladling the curds into individual moulds. It is then drained in a traditional manner and aged in a ripening room for about 15 days, just long enough to express all of its flavours.
FLAVOUR: Known for its piquant taste, it can be eaten at various stages. When young, it is tender in texture, becoming harder, dry, crumbly, and sharp as it ages.
HOW TO SAVOUR: Best paired with the most vigorous full bodied wines to enjoy the flavour of both wine and cheese.
