            Cheddar Le Silo 59e Parallèle

 The Silo 59e Parallèle is made in the far north of Scotland in a cheesemaking facility in the Orkney archipelago located closed to the Artic Circle on the 59th parallel. Neighbor of a famous whisky distillery it is certainly the most northerly of the Scottish cheese production. 
The Orkney Islands enjoy a temperate climate and are exposed to constant winds and numerous storms. 
The recipe used to make this Silo 59th is the one of the Orkney Swannay farm, which has made cheddar for half a century. Among the specificities of this cheese is the maturing of each 19 kg block in a wooden box. 
Lovers of English cheddar will find in this Silo 59th the typical aroma of cellars, a perfectly smooth texture and a remarkable taste persistency which invites to pair it with a lager beer or even better with a Scottish malt whiskey.
